1 Lb Lean 96/4 ground beef 3 cloves Minced garlic 1/3 cup chopped yellow onion 6” extra thin Corn Tortillas fat free Refried beans low Skim Mozzarella Homemade Taco Seasoning: - 1 Tbs Chili - ¼ tsp Garlic Powder - ¼ tsp Onion Powder - ¼ tsp dried oregano - ¼ tsp red pepper flakes - ½ tsp Paprika - 1 ½ tsp cumin - 1 tsp each salt and pepper In a pan over med-high heat add the oil, garlic and onion. Allow this to cook down until the garlic and onion becomes fragrant. Now add the beef, chop it up really well and sprinkle the taco seasoning on top! Now mix this really well stirring often to brown the beef and cook through. Once done, take of the heat and set aside. Place the tortillas between some wet paper towels and heat them very well in the microwave ( This will make them more pliable so they won’t crack) Now move quickly! Spread 1 Tbsp of refried beans on half of the tortilla, then 2 oz beef and top with ½ oz of cheese. Fold the other half of the tortilla over to make a taco and gently press down. Repeat for each taco. Once all done, place them on a parchment lined baking sheet and place another separate baking sheet on top. Bake in the oven for approx. 15 min. Just until the shell is nice and crispy and cheese is melted. Serve with optional toppings: Sour Cream, lettuce, salsa or guac 51P 27C 16F 456KCals (Per 3 tacos built as is)
