Buffalo chicken Mac N' Cheese Bring a pot to a rolling boil and add a big pinch of salt. Add 4 servings of pasta (I used banza chickpea pasta but you can use regular also!) After pasta is done about 7 minutes remove and drain. Pot goes back on over medium heat with 1 tsp oil Add 4 cloves minced garlic 1/2 cup diced yellow or white onion 1-2 servings of Canadian bacon 3-6 pieces cut up (low fat). Handful of broccoli florets Seasoning; we went with about 1/2 tsp of salt, pepper, garlic and onion powder and a dash of smoked paprika. Let this all cook while stirring for about 3-4 minutes. Next we add 1.5 cup milk (I went almond milk but for a fuller flavor you can use whole milk. Now add your 4oz low fat cream cheese. Keeping it on a low simmer keep stirring till cream cheese is melted then add 4 servings of low fat cheddar cheese and stir till velvety smooth and remove from heat and add your past! Boom! šŸ’„ If you used the chickpea pasta you can eat as is if you want or if you want more protein add your air fried chicken tossed in buffalo sauce! This recipe makes 4 total servings!
